<li><span style="font-size: medium;">Combine the yeast and warm water in a small bowl. Let yeast and water mixture stand for about ten minutes until milky or cloudy.</span></li>
<li><span style="font-size: medium;">Combine flour and salt in a food processor.</span></li>
<li><span style="font-size: medium;">Add olive oil and yeast mixture to the flour mixutre in the food processor.</span></li>
<li><span style="font-size: medium;">Using pulse, blend the mixture just until dough forms.</span></li>
<li><span style="font-size: medium;">Remove dough from food processor and place on a floured surface, kneading dough (folding one edge into the middle and pressing down, turn dough and repeat) for about one minute..</span></li>
<li><span style="font-size: medium;">Using a sharp knife, cut the dough into two equal pieces. Place each dough section into a separate bowl that has been oiled with olive oil, so it will not stick. Cover each bowl with plastic wrap and put somewhere warm for about one hour. Dough will almost double in size.</span></li>
<li><span style="font-size: medium;">Remove one dough and push down in center, removing air bubble. Knead dough about 5 times and place back in bowl. Repeat this with second dough.</span></li>
<li><span style="font-size: medium;">Place dough back in bowls and cover again. Let stand for about 35 more minutes.</span></li>
<li><span style="font-size: medium;">Remove each dough and knead separately about 5 times to remove air pockets.</span></li>
<li><span style="font-size: medium;">Using your fingers, working on a floured area, push dough out from center to create a 6 to 8&#8243; circle with the dough. Work with hands (or roller) to thin dough out to about 8 to 12 inch pie.</span></li>

			<content:encoded><![CDATA[<h2>Everyone&#8217;s Favorite Chicken Quesadillas &#8211; So Easy To Make and Dreamy To Eat</h2>
<p>These chicken quesadillas are simple to make, and are perfect for any occasion.  Use them as a summer time meal, or a a party favorite.  I often put these out as finger foods at movie gatherings, and no matter how much I make, there never seems to be enough to go around.</p>
<p>This recipe makes 6 Chicken Quesadillas</p>
<p>Ingredients:</p>
<ul>
<li>One medium vidallia onion</li>
<li>2 Tablespoons of olive oil</li>
<li>2 boneless skinless chicken breasts</li>
<li>Blackened Seasoning</li>
<li>6 Large flour soft tortillas.</li>
<li>12 &#8211; 16 ounces of shredded sharp cheddar cheese.</li>
</ul>
<p>Cooking Instructions:</p>
<ul>
<li>Peel your medium onion and then slice it in half.Â  Slice each half into strips.</li>
</ul>

<li>Heat about a tablespoon of olive oil in a skillet on medium heat.Â  When oil is hot, add onion slices and cook until caramelized.Â  Remove caramelized onions from heat and place in a small bowl.</li>
</ul>

<li>Sprinkle one side of each chicken breast with the Blackening Seasoning. (My favorite is Cajun&#8217;s Choice brand, which I get from the local supermarket in the seafood department.)</li>
</ul>

<li>Using the same skillet that you cooked the onions in, bring the skillet back up to medium heat, with just a pinch of olive oil.</li>
<li>When the pan is properly heated, place the two chicken breasts in the skillet, seasoning side down.Â  Then, immediately season the other side of the chicken.</li>

<li>Cook the chicken for 5 minuts on each side, only turning once.Â  You should develop a dark crust on both sides of the chicken.Â  This is not burnt, but &#8220;blackened&#8221; for a great flavor to add to your quesadillas.</li>
</ul>

<li>After cooking both sides of the chicken breast, remove from heat.Â  Place chicken breasts on cutting board and use a sharp knife to cut into small strips.</li>
<li>Place a flour tortilla on a flat surface, and fill half of the tortilla with chicken, cheese and onions.</li>
</ul>

<li>Fold tortilla in half.</li>
<li>Heat the skillet (same one you have been using) to medium heat once again.Â  Place a very small amount of olive oil (about the size of a penny) in the skillet and heat.</li>
<li>Lay one quesadilla into the skillet.Â  Use your hand to gently spin the quesadilla 360 degrees in the skillet, to ensure the olive oil spreads under the quesadilla.Â  This will help give you a nice crunchy quesadilla without having it break and turn to dust when you bite it.</li>
<li>Cook quesadilla for about 2 minutes on medium heat, and then flip.Â  Rotate quesadilla 360 degress again for proper cooking.Â  Cook for an additional 2 minutes.Â  Cheese should be fully melted, and some nice golden browning on both sides of the quesadilla.</li>
</ul>

<li>Use a pizza cutter to slice the quesadillas into 4 wedges and serve with sour cream.</li>
