Oven Sun Dried Tomatoes

Sun dried tomatoes are full of flavor and an excellent addition to many dishes, including posta and vegetable dishes.  The dried tomato is condensed and packed with concentrated flavor that is just delicious.  It is actually quite easy to make your own sun dried tomatoes in your oven.  And not only is it simple, but they taste so much better then the store bought ones.

I call these All Day tomatoes, because the process takes several hours of cooking the tomatoes in the oven at a very low heat.

Ingredients

  1. Roma Tomatoes (use as many or as few as you wish. I like to make larger batches at a time because of the length of time it takes to prepare these.)

    Olive Oil or Non Stick Olive Oil spray

Instructions

  1. Note: It is not a good idea to start these too late in the day, as the cooking time is quite long.

    1. Preheat your oven to 250 degrees

    2. Boil water in a large saucepan

    3. Using a sharp knife, cut a large X at the non stem end of each Roma Tomato. (See photo below recipe)

    4. When water is boiling, place Roma tomatoes into boiling water for 2 – 3 minutes.

    5. Take tomatoes out of boiling water and place into a large bowl of ice water (cold water with ice cubes)

    6. After tomatoes cool for a few minutes, remove from ice water and peel skins off of tomatoes. Start at the cut end and peel downward. Skin should come off easily.

    7. Place peeled tomatoes on baking sheet, and brush with olive oil, or oil-spray.

    Bake in oven. cooking time can vary depending on quantity of tomatoes. I normally bake tomatoes at 250 degrees for 5 hours. Then I shut the oven off and keep the tomatoes in the warm oven for another hour or two.

    Tomatoes are done when they have a nice roasted look, and retain very little liquid.

    It is a good idea to make large batches. You can always freeze your roasted tomatoes for up to 6 months.
