Give Me The Fish
No need to run out to those fast food joints to get a great (and fresh) fillet of fish. This pan fried fish in cornmeal is one of my favorite fish dinners.
Recipe: Cornmeal Pan Fried Fish
Summary: Cornmeal crusted, pan fried fish.
Ingredients
4 – 6 Medium size Tilapia or Orange Roughy Fish fillets (thawed if purchased frozen).
1/2 Cup White or Yellow Corn Meal
1/4 Cup All Purpose Flour
4 Tablespoons grated parmesan cheese
2 Tablespoons Italian seasoning.
1/4 teaspoon of garlic salt
1/4 teaspoon of pepper
1/2 skim milk
Small amount of olive oil
Instructions
1. In a bowl, mix together the corn meal, flour, parmesan cheese, Italian seasoning, garlic salt,and pepper. Then, empty the dry ingredients onto a plate to make battering the fish easier.
2. Place milk in separate bowl, near to the corn meal mixture.
3. Dip each fish fillet into the milk, and then roll fish in corn meal mixture, generously coating the fish with the dry mixture. Place each coated fillet on a separate plate.
4. Heat a medium size skillet to medium heat with a small amount of olive oil (about 2 tablespoons).
5. When oil and pan are hot, place fish into the pan and cook 3 to 4 minutes on each side, flipping once. Each side of the fish should become golden brown.
If you are cooking multiple fish fillets, you may need to occasionally add more olive oil to the pan.
